Summer Kale Salad

Ahhh…. Kale, kale, I LOVE Kale!!! It’s super yummy and ultra-nutritious! Here’s a simple Kale salad recipe. The most important thing to strive for is, “use LOCAL produce and ORGANIC”!!! If you can do that, you’ve got a “turbo salad” on your hands!!

Prep time: 20 minutes

Serves: 4

Bright and refreshing- the natural acids in the lime tenderize the kale- no cooking required!

  • 1 medium bunch kale
  • 1 lime, juiced or squeezed directly in to salad.
  • 1 ripe avocado
  • 1 Hand full of Pecans or Walnuts
  • 1 Medium size Apple or Pear
  • 2 tbsp extra virgin olive oil
  • Himalayan Salt, to taste
  • Freshly ground black pepper, to taste

Wash the kale,  remove the ribs and chop into bite size (or smaller) pieces. Put into a large bowl, and add lime juice, olive oil, nuts, avocado salt and pepper. Use your clean hands to massage the salad and ensure that each leaf is thoroughly covered with dressing. Massaging the Kale is important as it helps break down the fibers and soften/absorb the dressing. Taste, and adjust seasoning if necessary. Cover and let sit in refrigerator for, minimum, 14 minutes. Enjoy!
